Some days you want a sort of “goldilocks” breakfast the mornings: something less than stuffed french toast, but more than just a cup of coffee. For those days, I like to whip up a smoothie. This one is inspired by a great one I’ve had at 10 Fruits. When my wallet or my morning schedule can’t fit a stop there, this is my go to!
HEALTHY BREAKFAST SMOOTHIE
What You’ll Need
lemon juice to taste
(I never use exact measurements here, increase or decrease quantities depending on what you want that day. More bananas or PB for a thicker smoothie, more water to thin it out. You can swap out the PB for any other nut butter or leave it out entirely, and add a drizzle of honey if it’s not sweet enough for you.)
Put the bananas, blueberries, peanut butter in for a whir in your blender. Add half of the acai packet, some coconut water, and some lemon juice through the little port at the top of the blender’s lid. If it’s too thick, add more water (regular or coconut) until it’s reached a consistency you like. Blend a bit more, and you’re all set!
